♥ Kitchen Cuisine ∫ Noodlesalad with Cucumber

I love love love noodles! So when my mom suggested that we should out try this recipe she found, i was immediately excited.

Like we do with almost every recipe we try out, we change it a little and make it our own. For example in the original recipe it says you have to boil the chicken, but we fried it and you’re suppose to cool the noodles down before eating it, but we didn’t and so we had a warm meal.

So what did we do? First we fried the chicken and added the courgette after a few minutes. We cooked the sugar peas for 3 minutes and the noodles according to the instructions on the box. Then we added the peanut butter, soy sauce, lemon juice and 4 tbsp of water to the chicken and courgette to get a smooth pulp. After adding the coriander and the spring union, we mixed in the noodles and topped it off with the crushed peanuts. On the side we had the cucumber, for the fresh taste.

It was a recipe that wasn’t hard to make, it tasted delis and it made me feel full the rest of the evening. It ticked all my food boxes and it’s definitely going in my recipe book so i can make it again!

For this noodlesalade recipe you’ll need (for 4 people)
  • chicken breast (75 gr per person)
  • rice-noodles (75gr pp)
  • 200gr sugar pies
  • courgette
  • squeezed lemon
  • 2 tbsp soy sauce
  • 2 tbsp peanut butter
  • cucumber (cut up in parts)
  • coriander (15gr, only the leafs)
  • spring union
  • 3 tbsp unsalted peanuts (crushed)
  • 4 tbsp water
