Delish Dish

It had been a while since we (me & my mom, ’cause i’m eating at my parents most days of the week) tried a new recipe. And in the Allerhande (a monthly supermarket magazine from Albert Heijn) we found one.  It was an Indian meat oven dish. The recipe looked good, easy to make and there for promising.

Last Wednesday was the perfect moment to try it out, i didn’t have to rush to the pool after diner and my parents didn’t have any plans so we had all the time.

As kind of a surprise i wanted to have the dish already baking in the oven by the time my mom would come home from work, so i started early. I never believe the time that’s been mentioned in the recipe, most of the time it takes me a little bit longer. But surprisingly not this time. The dish was really easy to make and almost done when my mom got home.

All i had to do was first cook the meat for a few minutes, then add the vegetables and after that add the tomato cubs, peanut butter, soy sauce and if you want some pepper. When it was all mixed, i put the blend in the oven dish, top it with the potato slices and cover the potatoes with the seroendeng (which i made into pulp by using some olive oil). When all that was done, i let the dish bake in the oven (preheated to 200 degrees Celsius) for about 25 minutes.

Like i said this dish was easy to make, but it was also easy to eat. Wauw it tasted so good, loving the after taste because of the peanut butter and seroendeng.  This is definitely going in my recipe book to be cooked more often!

For the dish you need (for 4 people) :

  • 4 tablespoons olive oil,
  • meat (300gr, minced)
  • bag of chinese stir fry vegetables (400gr)
  • can off tomato cubes (400gr)
  • 2 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • potato slices (700gr)
  • seroendeng (100gr)
